Crockpot Chicken Parmesean

Another great pinterest find, originally from this website.  This is an easy week night meal. I love chicken parmesean but cooking it in a pan causes a lot of mess and is pretty time consuming. This recipe cooks it in the crock pot, and then as it is almost done you can boil some noodles and ta-da a wonderful meal!

What You Need:
2-4 boneless, skinless chicken breast halves
1/2 cup Italian Seasoned Bread Crumbs
1/4 cup Parmesan Cheese
1/4 t black pepper
1/4 t kosher salt
1 TBSP olive oil
1 egg, beaten
1-2 cups shredded mozzarella cheese
marinara sauce of your choice


What You Do:
Spread the 1 TBSP of olive oil into the bottom of your crockpot.
Beat the egg with a fork in a separate bowl.
Mix the bread crumbs with the seasonings and the Parmesan cheese in another separate dish.


Dip the chicken into the egg, then into the bread crumb mixture, coating both sides with crumbs, cheese and seasonings.
Place the chicken breast pieces in the bottom of the crockpot.

Layer 1-2 cups of mozzarella cheese on top, depending on how much cheese you like.

Cover chicken and cheese with entire jar of marinara sauce.

Close lid and cook on low for 5-6 hours or high for 3.
Serve over pasta!

NCSU vs Maryland

Last weekend we went up to Maryland for the NC State vs Maryland football game.

On the way up we stopped in Alexandria to visit our friends, Terry & Melissa that have moved up there. We went out with them in Old Town Alexandria. It is so quaint... I loved it! Reminds me of Charleston. We went out to an Irish Pub there and ran into Kimberly! So random that we would see her there! They were in DC that weekend for an engagement party and just also randomly went to that bar!


We stayed at Cherry Hill RV park with Brenna, Loyd and Allison in Loyd's RV. We tailgated at the RV Saturday, grilled for lunch and then headed over to the stadium.

Marianna's sister Maddi goes to Maryland so they were tailgating with some of her friends and we met up with them shortly before the game. Mikey was tired from their drive up and was being entertained by watching Mickey Mouse.


The game was pretty intense... we pulled out a close one and it was a lot of fun.




We won!!
The next day was a pretty drive home as the leaves were changing!
 Everybody was tired after a long weekend.... (Vegas is in there too!)

NC State Fair

October is such a good month... the leaves start changing colors, lots of football and the state fair!! Last week Trey and I went to the fair, his mom, sister and cousin joined us.

We ate lots of food: corn, corn dogs, deep fried oreos and reeses and a blooming onion! We didn't ride any rides but enjoyed the exhibits and animals! We walked around and looked at the animals and huge produce.


Then we watched the pig races! They are so cute and funny running around the track to get to their cheese doodles!


And we ended the night in our favorite part, the gardens!







Beach Weekend

Mandy decided to come home for her birthday so we picked her up at the airport Friday night and went to the beach for the weekend! We hadn't been planning on going to the beach but it was a beautiful weekend to randomly decide to spend down there :)

Saturday we went to the Newport Flea Mall (always interesting) and had a delicious lunch at Olive Garden. They actually have a special right now, for $12.95 you get "dinner today and dinner tomorrow".. I got five cheese ziti and got the special... the normal price is $11.95, so for $1 more I got another one! Pretty awesome.

Saturday night Aunt Beth & Bonnie came over for dinner and they made a great seafood dinner. We had fried shrimp, soft shell crab, blackened mahi, squash fritters and homemade coleslaw.

Sunday we got up and took the dogs on an early morning walk on the beach, it was perfect out. They love running up and down the beach chasing birds and the tennis ball. Tyson loves to run into the water and isn't afraid of the waves!















When we left Sunday afternoon we dropped Mandy off for lunch, so on the way there Vegas sat in her lap, happy as can be - sun on her face, looking out the window, sitting in Mandy's lap!

We also found gas for $3.34 in Goldsboro on the way home! So much cheaper than anything else!

This is the second time I've run 6 miles and I still get so pumped about it! Really starting to think I can make it 13.1 by February :)

Everlasting Treat

Last week Trey stopped at Petsmart on his way home and bought two everlasting treat toys.


We have been wanting to get one for Tyson for a while. He has so much energy and is pretty much non stop so we thought a never ending treat would be a great toy for him. He got one for Tyson and one for Vegas and they love them. They play with them for hours. Vegas of course trys to steal Tyson's and runs into her cubbie with it. She also somehow managed to get the treat out and just eat it, while Tyson enjoyed just chewing at it, the way it is supposed to be used.
