I found this recipe through pinterest and finally got around to making it last week! It was not the quickest thing to throw together but it was delicious when it was done!
What You Need:
1 lb. fresh broccoli
3 cups cooked chicken breasts (about 2 large breasts)
3 cups grated cheddar cheese
2 tubes Ritz crackers
1 stick melted butter
1 tablespoon poppy seeds

(another) 1/3 cup Butter- melted
1/4 cups Cornstarch, dissolved in 1/2 cup COLD Water
1/3 cup Chicken Broth
1/4 tsp. Salt
1/4 tsp Pepper
2 Cups Milk
1/4 cups Cornstarch, dissolved in 1/2 cup COLD Water
1/3 cup Chicken Broth

1/4 tsp Pepper
2 Cups Milk
What You Do:
Cut the broccoli into pieces and steam for 2 minutes. Cook the chicken and cut up into small pieces.
In greased 13×9 pan, layer the broccoli and chicken and set aside.
In a saucepan over medium heat, combine 1/3 cup melted butter, cornstarch
dissolved in water, 1/3 cup chicken broth, 2cups milk, salt and pepper.
Stir well, and
continue stirring until sauce has thickened. Turn heat down to low, and
add 1.5 cups of the grated cheddar cheese. Stir until melted.
Once sauce is complete, pour over the
chicken and broccoli. Top with additional 1.5 cups grated cheddar cheese.
Melt the stick of butter, add the poppy seeds and stir well. Crush
crackers in large zip-lock bag with a rolling pin. Don’t crush too
small. Add crumbs to the melted butter and mix well.
Sprinkle crumbs over the top of
the grated cheese.
