Yard Work

I have the best husband ever. I came home from work last week to find this:

A pile of mulch!

A huge pile of mulch in my way. He got off work early on day and got a huge pile of mulch and started working on our yard. He mulched all of the flower beds up front and moved some azalea's from our backyard (that were constantly getting eaten by Tyson) to the front and made a little row of them. Hopefully they will survive being eaten and bloom here now!


Everything looks nicer with a layer of mulch :)


And now that it is March and the weather is getting nice we will work on getting grass in the backyard (everytime we plant and it finally starts to grow my maniac dogs destroy it) and re-doing our patio.


I love having such a handy husband.

Chicken with Honey Sauce

I posted last week about making some more freezer meals. Tonight we ate the Chicken with Honey Sauce. It was a in a long post from the Test Kitchen of Melissa Fallis that she did a lot of freezer cooking, but it boils down to this recipe:
·         1 cup honey
·         1/2 cup soy sauce
·         1/8 cup chopped onion (I did more than that)
·         1/4 cup ketchup
·         2 Tbs. vegetable oil
·         3 cloves garlic, minced
·         1/2 tsp. red pepper flakes *if you don’t like heat, don’t add these
·         2 chicken breasts
All in the freezer bag, cover the chicken well and freeze. When you want to eat it, let it thaw in the freezer. Cook in the crock pot on low 7-8 hours or high 3-4 hours.
 
She sets it up to split her recipes in to 2 freezer bags, I'm not sure if I was misreading, butI
felt like that mixture of sauce was only enough for 1 bag. I wanted to be sure I had enough
sauce to cover the 2 chicken breasts while they were cooking in the crock pot. So I ended up
only making 1 freezer bag this time.


I heated up some of my frozen rice, that I made on my first freezer cooking adventure. It's pretty sticky but that's the first time I have used brown rice (at all) and since I don't ever thaw things very far in advance I'm not sure if it's because of that or just how the rice is. We started to cook broccoli to go with it, and then realized that we didn't have very much (one I bought too long ago and gone bad!) So we threw that in with the chicken as it finished cooking. Then we (Trey) cooked up some asparagus to go on the side. It all turned out pretty yummy.

Wordless Wednesday

So I'm going to start the trend of Wordless Wednesday that I see on a lot of other blogs. It's pretty self explanatory but basically just time to upload pictures from the week :) And, you guessed it, this weeks' is the dogs.... What else do I have to take pictures of?!

Busy in the Kitchen!

We have been busy in the kitchen lately and last night was no different! I baked the chicken cordon bleu that I posted about yesterday.

While that was baking I also made twice baked potatoes from the Test Kitchen of Melissa Fallis. Here is our attempt the twice baked potatoes:

It is way harder to scoop out potatoes leaving a nice shell than it seems! Trey was way better at this than me. 

And to go with our chicken cordon bleu we made green beans and caramelized onions :) I'm sure Gordon Ramsey would insult my dish and say that they don't compliment each other but oh well... it's what I was in the mood for.

All in all it was a pretty good meal and we have twice baked potatoes ready for another night! I'm so glad my hubby is so willing to help me in the kitchen. I'm definitely not the best chef but with his help it turns out pretty good.

Chicken Cordon Bleu Bake

I found a recipe here for a chicken cordon bleu freezer dish. It is set up to be a make one, freeze one but I got the motivation to prepare it when it wasn't time for dinner, so I decided to just freeze both! It was really pretty easy and looks delicious. I'll update after we eat it in the next couple of days :)

Chicken, covered in a layer of ham slices, covered with soup/milk mixture and some cheese
