Happy 2nd Birthday, Tyson!

Tyson is 2, today! I just looked back at the post I wrote on his first birthday... I almost forgot just how small he was.

He's still just as wild, crazy and loving now as ever. He snuggles any chance he gets, and if you move he will move closer to you.

He knows his routine very well and when he hears his treats in the morning as I'm getting ready to leave he goes right to his crate to wait for his kong full of bones.

Although he's a boxer, not a water dog, he sure does love to swim.



He LOVES to play tug-of-war any chance he gets and with anyone willing to play with him.


He thinks that every person and dog he meets loves him and is going to be his new best friend, but he definitely has his number 1... his sister. He sleeps on top of Vegas any chance he gets... until she crawls out from under him because she gets hot.





He listens really well, he will come from a mile away when you call him, will get up in the middle of a nap and go outside if you tell him it's time to go potty and will do his tricks in a heartbeat so he can get that treat :)
But he is still a puppy and sometimes has his wild moments.....

They say that dogs tend to calm down around 2... we'll see how that goes ;)

Enchiladas

I found this recipe on EatAtHomeCooks.com. It is pretty good and I have altered it slightly to what we like :)

What You Need:
2 breasts of chicken, cooked and shredded
1 can tomato sauce (I actually buy 2 and use about 1.5 cans... I like things saucy)
About 1.5 cups shredded cheddar cheese
1 small can green chiles, diced
1 tsp garlic powder
salt & pepper to taste
1 package small tortillas

What You Do:
Mix the chicken, 1 cup of shredded cheddar cheese, green chiles in a bowl.
In another small bowl, mix tomato sauce, garlic powder, salt & pepper.
Spray a 13 x 9 pan with cooking spray, then spoon a thin layer of tomato sauce on the bottom.
Lay out tortillas and fill each with chicken mixture.
Wrap up tortilla and place it in the pan.
Top wraps with sauce and sprinkle the rest of the cheddar cheese on the top.
Cover with foil and bake at 350 degrees for about 45 minutes, until hot and bubbly.



Fall Festival 10K

Last week at the packet pickup for the City of Oaks race, the organizers of the Raleigh Fall Festival were advertising their race and the entry was half price! Marianna and I picked up a registration form and decided to do the 10k! Trey ran with me just because! And my friend Jennifer and her boyfriend, Rick (who also ran the City of Oaks Marathon) ran too!

It was at 1:30 on Sunday which was nice because we got to sleep in :) We all started the race together but separated along the way. Trey ran faster than us and took off a little ways in. He stayed about a minute or so ahead of me. I ended up moving a little bit faster than Marianna, I think those back to back marathons have worn her legs out!

 Trey does NOT run... he said he would run this race with me so he decided to go out and give it a try, running in the neighborhood and he did more than try... he ran 6.9 miles in about an hour and 7 minutes. And at the race he came out and beat me! I am so proud of him... and also a little jealous that he can just go out and run like that! ;)

Trey finished with a time of 1 hour and 10 seconds (a 9:50 pace, 130 out of 222 people)! I came in not too long behind him in 1 hour, 1 minute and 21 seconds (a 10:01 pace, 140 out of 222 people).

Just before the race started, Rick saw a friend there and introduced her to us. She and I ended up running at basically the same pace and stayed together the whole race. It was nice to run next to someone the whole time.

Egg Brunch Casserole

The other delicious breakfast dish that I mentioned in last week's tailgate post was also of course a pinterest discovery. It is an easy crock pot recipe that is prepped the night before and ready to eat when you wake up!

What You Need:
1 pack of bacon (the recipe called for 6-8 strips, but I opened a whole one anyways and decided to use it all... it was great!)
1 onion peeled & chopped
1 clove garlic peeled & minced
1 green pepper, seeded & chopped
1 (2 lb) bag frozen hash browns
1 1/2 cups shredded cheddar cheese
12 eggs
1 cup milk
1/2 tsp salt
1/2 tsp pepper

What You Do:
Spray crock pot with non-stick cooking spray
Cut cooked bacon into 1/2 inch pieces, set aside.
Saute onion, bell pepper and garlic for 5 minutes.
Place 1/3 of the frozen hash browns on the bottom of crock pot, add 1/3 of bacon, 1/3 of onion, pepper, garlic mixture and 1/3 of cheese.


Repeat layers, ending with cheese on top.

In a large bowl, mix eggs, milk, salt & pepper. Pour ingredients over crock pot.
Cover and turn on low for 8-10 hours.

Serves 8-10

Cinnamon French Toast Bake

I mentioned this in the yummy breakfast from our tailgate in yesterday's post. Here is the recipe, initially found on pinterest of course!

What You Need:
1/4 cup melted butter
2 cans (12.4 oz each) Pillsbury® refrigerated cinnamon rolls with icing
5 eggs
1/2 cup heavy whipping cream
2 teaspoons ground cinnamon
2 teaspoons vanilla
1 cup chopped pecans
3/4 cup maple syrup


What You Do:
Melt butter and pour on ungreased 13×9 inch glass dish.
Separate cans of dough into 16 rolls reserving the icing for later use.  Cut each roll into 8 pieces and add to buttered baking dish.

Beat eggs in medium bowl. Add cream, cinnamon and vanilla and beat until well blended.

 Pour over cut pieces of cinnamon roll pieces.
Sprinkle with pecans (I only covered half of the rolls with pecans) and drizzle 3/4 cup syrup over the top. Bake at 375 for 20 to 28 minutes or until golden brown.

Remove the covers from icing and microwave on medium  or 50% power for 10 to 15 seconds. Drizzle icing over the top.
