Burrito Bowls

We love Chiptole's burrito bowls so I thought I would try to throw something similar together at home that we could take to work for lunch. It was quick, easy and pretty delicious! 

What You Need:
1.5 cups uncooked rice
1 can black beans
1 can corn
2 chicken breasts, trimmed of fat
1 jar salsa
1 jar salsa con queso
lettuce
tomato
onion
sour cream
shredded cheddar cheese
any other toppings of your choice!


What You Do:
Put the chicken in the crock pot and cover with 1/2 jar of salsa & 1/2 jar of queso. This will keep the juices in while it cooks and make for a nice flavor/sauce. 
Cook on low in crockpot for 4-6 hours until done. Just 2 breasts usually won't take much longer than 4 hours. 
Shred chicken with 2 forks. 
Cook the rice according to the instructions.

I use Pyrex bowls to store this in. Set out bowls/tupperware. (Makes about 5-6 depending on your preference of serving size). Layer bowls with rice, beans, corn and chicken. 
 


That's all I put in the bowls because they will be microwaved. We take a separate container of cut up onion, tomato, lettuce, cheese and sour cream to top it with once it has been heated but soggy lettuce is disgusting, so don't heat it!
