One Pan Dinner: Chicken, Potatoes & Greens

This has been a recipe filled week! I have been tired of the same old foods so I've tried a few new pinterest finds. This one was basically just directions on a picture and it's very straight forward. It all cooks in one pan... I love that - barely anything to clean up!

What You Need:
3 chicken breasts
4 medium red potatoes
green beans (or broccoli!)
1/2 stick of butter, melted
italian dressing mix packet

What You Do:
Preheat oven to 350 degrees.
Cut the chicken breasts in half. Cut the potatoes in to small chunks. Spray the bottom of a 13x9 pan, put the chicken in the middle, potatoes on one side and green beans on the other side. Top with half a package of italian dressing and pour melted butter over the top.

Cover with aluminum foil and bake at 350 for about an hour!

  1. This is in my oven right now! To make it a little healthier, use 3 tablespoons olive oil instead of butter and use fresh green beans instead of canned!

  2. I made it tonight, using olive oil instead of butter, too. It was a huge hit! Especially with my finicky kids! I will definitely make this again, esp. with more chicken.

  4. I went in the opposite direction. I put lots of butter, Added a little cheese and bacon bits on the potatoes, and then covered with Italian dressing. =] Can't wait to see how it comes out!

  5. Making this right now, except I used yams and broccoli, and did olive oil and Mrs. Dash spices instead haha, hopefully it turns out equally awesome :)

  8. I am using McCormick's Zesty Italian chicken marinade packet, no butter, just the olive oil used to make the marinade. Have decided to put potatoes and asparagus in this time. I may try some other combinations in the future.

  10. My alterations: white potatoes, ranch dressing packet, added minced garlic to potatoes, used butter on green bean side only and olive oil on chicken & potatoes. It's in the oven now and it's smelling yummy... can't wait to see how it turns out!

    1. I believe the potatoes would brown. I would cut the chicken and store in a ziploc bag so it is easier to throw together. If you pre-cut the potatoes they will brown, if you put them in a ziploc it may be less than already in the pan, they will still taste okay just look a little different.

    2. Store the potatoes in a bowl of water... they will not brown and it pulls some of the starch out

  17. Yes, you can Darlene. I've been doing this all summer. I'm on a low sodium diet, so I've been using Herbox chicken flavoring and Mrs. Dash's chicken, and some pepper, and with Pam butter spray. I also use chicken strips, bake at 350 for 30 min, remove foil and broil for 10 min. Out of this world good and still on my diet.

  18. I used this concept with lemon pepper seasoning on the chicken and garlic salt/pepper on the potatoes instead of the dressing mix, and 3tbsp olive oil instead of butter, and frozen mixed veggies...turned out great!

  21. im 15 and this is the first meal i have ever cooked its in the oven right now!!!!!!! my pan is permanently sticky and dirty so i put tin foil on the bottom of the pan and then i covered the pan with tin foil and put it in the oven i hope it dosn't effect anything

    1. Good job!! I couldn't have done that at 15. I just got a new pan, but am very accustomed to lining everything with tinfoil first. No, it doesn't affect anything. :-)

  29. Mine is in the oven now. I sprayed the bottom with canola spray... and used spray butter on top. Canned green beans, with bacon bits and minced onions on both veg. Italian seasonings.

  34. I commented on pinterest, but wanted to comment here as well. I have a crew of 6 (all males!), so I use 4 chick breasts, 6 potatoes, and 2 cans of beans in an 11x14 dish. I use the same amount of seasoning and butter, and it comes out tasting just as yummy! I am making it again tonight and am going to use olive oil as suggested from previous comments!

  35. Our church provides for people who have had surgery or for any reason can't get their own meals. This is the perfect meal to take to them. They seem so relieved not to be getting another casserole or lasagna.

  41. I have made a similar dish using marinated chicken in the crock-pot. I put the chick in the crock-pot on low, after 3 hours I add the potatoes or sweet potatoes and then after 2 more hours I add the fresh or frozen broccoli or green beans for the last hour. I use a plastic crock-pot liner bag and clean up is super easy and the family loves the meal. I serve it with a slice of bread or garlic bread (my boys love bread). Fast easy meal with minimal effort.

  42. I have this in the oven as we speak. I used ranch seasoning instead, as I do not care for Italian seasonings. I think it will be delicious. I'm just curious of the broiling last ten minutes suggestion.. ( Guess I will make that call when I get there! )

  43. I have this in my oven now with red potatoes, chicken, and cauliflower topped with a packet of onion soup mix. I substituted olive oil for the butter hopefully it turns out tasty.

  44. i marinate my chicken in italian dressing ( i believe its wishbone low sodium or fat free) over night and just pour it in the dish with my chicken and still use the olive oil and italian dressing mix on top. leaves the chicken crazzyyy moist!! cooked for 50 min at 350

Hethought I tell how I made my chicken veg potato casserole for the liquid I used 3/4cup of chicken broth covered all then baked for hour WOW my friends thought it was great moist and take great kept some broth for quest to use if wanted more but it turned out great thanks for letting me share

  60. I have made this several times--love it! Not as good with Mrs. Dash as with Italian Seasoning packet. I didn't have a packet this time so I looked up a recipe and made it myself-- here is the recipe, super easy: http://allrecipes.com/recipe/25171/italian-dressing-mix/

    Didn't have celery salt so used celery seed, did 1/2 onion salt and onion powder, added some Johnny's seasoning salt as well. Did two bars of butter because we had extra of the ingredients so made 2 portions. And also--why not. Its smelling yummy, can't wait!
