Memorial Day Weekend at the Beach

Trey had memorial day weekend off (AND MONDAY!), so we were able to head to the beach for a long weekend!! We went down Friday afternoon and had dinner with his family when we got there and just relaxed for the night.
Little man loving on Tyson after dinner Friday

Saturday morning we took the dogs to the beach for a walk and to let them run and play in the water, but it was really windy from the Tropical Storm out in the ocean. We took Tyson's frisbee on our walk to let him chase on the beach. Shortly after we got there Trey commented that Tyson would probably lose it in the ocean. Well... it did get lost in the ocean. But not because of Tyson! Trey threw the frisbee and the wind caught it, slamming it down into the water. Tyson and I both frantically ran it after it but it was gone!!! :( He wasn't too happy about that. But luckily they did get to have some fun with it before it disappeared. Tyson loves running in and out of the water and the waves don't seem to scare him! Vegas will run in a little bit but when the waves come she backs off.

Come get it sis!

You can't get me here!

Since it wasn't a good beach day, we went shopping! We had to go buy a new frisbee of course. Trey's mom got a new printer and wireless router that he installed that afternoon. The printer is pretty awesome, it is wireless and you can print straight from your phone! We will be buying one of these soon :)

Saturday night we watched the NCSU baseball playoff game and then headed out in downtown Morehead for drinks! Tyson enjoyed the baseball game:

On Sunday we did get to enjoy the beautiful beach weather. We laid on the beach for a while, then walked back to the house to get the dogs and let them come play on the beach for a bit!

Come on out here!

Tired girl after a long day of playing

Sunday night I went to dinner with a couple of friends at Circa 81, in Morehead, it was really good!

Monday was finally nice enough and not too windy so we were able to go out on the boat! Trey's parents have kept the boat down near their campsite, down east, so they stayed the night there Sunday and Monday morning they picked us up at a boat ramp in Beaufort. We went over to a little sandbar and had the island to ourselves... until the tide came in!

Then we headed over to Shack, even though it was pretty busy, and took a walk along the ocean side. It was a beautiful day but Trey and I were a little sunburnt from Sunday so we didn't last all that long. We came back to the boat to hang out and the dogs were pretty beat too.

Trey had been laying on this towel and when he got up Tyson stole it!

We headed back in the mid afternoon so that I could go out to dinner with some friends. The dogs were SO tired on the way home, they had a busy weeekend!

Cheesecake Filled Strawberries

I found these on pinterest, which links back to this website. They were actually pretty easy to make and delicious!

Here is the recipe:

What you need:
1-1.5 lb large strawberries
1 (8 oz) package cream cheese, softened
3-4 Tablespoons powdered sugar
1 teaspoon vanilla extract
1/4 cup graham cracker crumbs (I just used a spoon and dipped into the box we have, and shook some on top, not a lot!)
Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out with a knife. Prep all of the strawberries and set aside.

What you do:

In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add cream cheese mix to a piping bag or Ziploc with the corner snipped off. I don't have a piping bag, so I used a ziploc but cut WAY too big of a hole, so it was difficult to get the filling far down... cut a tiny whole on the corner.
Fill the strawberries with cheesecake mixture.

Once strawberries are filled, sprinkle the tops with graham cracker crumbs. Refrigerate until served.

Welcome Back to America Dinner

My best friend recently went to China for 10 days with her MBA program, for an international business class. She definitely enjoyed herself and got to take in a lot of new experiences, but she was very ready to be back in the US!

We get together for dinner pretty much every week anyways, so last week I had them over for dinner a couple of days after she got back. I asked her if she cared what we ate for dinner and she said American food!

That was easy! So I went pretty basic American... burgers and fries!

I decided to try homemade fries and be a little bit healthier than just buying the bag at the store. I found this website that had directions for homemade fries, so I gave it a try!

I don't have a tool to cut the potatoes so I did it by hand... not very fun. And no chopping experience is complete with out a nice slit to the finger. It still stings. Before I make these again, I will definitely purchase a tool to cut them!

I soaked them in water (like the recipe said, to get the starch out and make it so they crisp better... I love crispy fries!), then dried them off and put them on wax paper to add salt, pepper and olive oil. Note to self: next time do the olive oil first, salt & pepper will stick better!

I forgot to flip them until about 15 minutes in (they cooked for about 45 minutes total) and when I went to flip them I used a plastic spatula so I ended up breaking the potatoes off instead of scraping up the part that was starting to stick.... next time a metal spatula would work better!

They did turn out pretty decent though, and yummy. I forgot to take a picture of the final product though... we were hungry!

And we had to have a delicious desert, so I made cheesecake filled strawberries! I found the recipe on pinterest and will post it tomorrow :)

And I also have to mention that while she was in China she bought me a cute little wine bottle cover and pearls! A very pretty, real, peral bracelet! :)

A Big Purchase!

On Friday, Trey stopped by my parents' house hoping to pick up their power washer to do some cleaning at our house this weekend. We had forgotten that it died a while back... so we didn't get to borrow it! So Sunday morning we decided to head to Lowe's and buy one for ourselves.

It was a pretty penny but very needed! Here are some reasons why we needed it so badly:

He cleaned the porch and patio on Sunday afternoon, and tested out how well it will clean the fence. I can't wait to have some more free time to clean the brick on the house and the whole fence. The fence basically looks brand new once it is cleaned!

Notice not clean vs clean!

I'm so excited that the porch is now clean and we can sit outside and enjoy the beautiful weather!

May Date: Durham Bulls Game

At the beginning of May, Trey opened our May Date envelope and saw this:

We decided to go to a Durham Bulls game on Saturday with another couple and it was a blast!  We went ahead and purchased tickets, but then went to Tyler's Taproom to have a beer before the game.

Matsui was recently traded to Tampa Bay and is playing for the Bulls so that was kind of cool, he's like a baseball celebrity!

It was a beautiful night to sit outside, watch baseball and enjoy ballpark food and drinks. We ate plenty of peanuts and drank lots of beer! The Bulls ended up losing, but it was still fun!
