I got this delicious recipe from my friend Jennifer. I never thought I would have liked spinach lasagna but it is amazing!
What You Need:
2 jars Bertolli Marinara (Olive oil, basil & garlic)
2 eggs
2 cups cottage cheese
1/2 tsp salt
2 bags fresh spinach (~10 oz)
1/2 cup Parmesan cheese
8 oz mozzarella cheese
8 lasagna noodles
What You Do:
Preheat oven to 350 degrees. Lightly grease a 13x9 baking dish. Heat a couple of tablespoons of water in a pan and cook the spinach.
In a medium bowl, beat the eggs and combine them with cottage cheese, salt, spinach and 1/4 cup Parmesan cheese.
Spread marinara on the bottom of the baking dish (about 1/2 to 2/3 cup). Place 4 uncooked noodles over the sauce, spread half the spinach mixture, half the mozzarella cheese and half the marinara. Repeat with the remaining ingredients.
Top with the remaining parmesan cheese.
Cover dish with aluminum foil and bake for 1 hour. Let it stand for 10 minutes before cutting and serving.
Serves 8
