Since we had so many cucumbers to spare this summer I had to find a yummy way to use them up. My friend brought this salad over once so I stalked her pinterest board and found it :)
What You Need:
2-3 Roma tomatoes, diced (they called for cherry tomatoes but we had Roma on hand and it was great)
2 medium cucumbers, peeled, seeded and diced (about 1/2 inch pieces)
1/2 medium red onion, chopped
1/2 cup crumbled feta
1/4 cup shredded fresh basil leaves
1 Tbsp red wine vinegar
1/2 tsp raw sugar OR honey
2 Tbsp olive oil
1/2 tsp black pepper
1/2 tsp salt
What You Do:
Mix together cucumbers, onion, tomatoes, feta and basil. Toss to mix around.
Whisk together vinegar, olive oil, honey, salt and pepper. Pour over the top and toss to cover all.
Creates ~4 side portions.
