End of Summer Fun

I have a slew of pictures on my phone from some odds and ends as the summer ended.

Trey and I booked a vacation for Christmas break!! Can't wait... we will be headed to the Dominican Republic!

We went out to Dame's Chicken and Waffles in Durham for Jennifer's birthday right before we had to head back to school. 

 After dinner we headed to Fullsteam Brewery for a beer... it's a cool place!

Creamy Sausage & Spinach Pasta

One of Trey's co-workers brought in this dish for a pot luck. He loved it, got the recipe and we made it the next week and oh. my. gosh.... DELICIOUS. I can't emphasize that enough... you need to make this!

What You Need:

1 lb sausage (we used Jimmy Dean hot)
1 cup chopped onion
8 oz rigatoni pasta, cooked
1 large tomato, diced
8 oz cream cheese
1.5 cups mozzarella cheese (separated 1 cup, .5 cup)
1 package frozen creamed spinach, thawed

What You Do:
Preheat oven to 350. 
Brown the sausage and onion. Drain. Return to pan.

Add diced tomato, cream cheese, 1 cup mozarella cheese and spinach.

Mix together well and melt cheese.

Stir in pasta and put in 2.5 quart casserole dish. 

Bake for 30 minutes, top with additional mozzarella and bake for 10 minutes more, uncovered. Enjoy!

Update!!
We decided to make this again but as stuffed shells... and it was AMAZING! Switch the rigatoni noodles for a 12 oz package of jumbo shells. Cook them according to the package (9 minutes for baking instead of the 12 minutes for just eating with sauce), stuff them with the sausage mixture and follow the rest of the recipe the same... So good!!


Panthers Game

Brenna and Loyd had extra tickets to the Panthers game last weekend so they invited us to join. It turned out to be an awesome game! At least one of my teams pulled out a good game that weekend!

We drove to Loyd's house Sunday morning and played with Marvin before we left to tailgate.



We picked up Bojangles to tailgate: 




 



The panthers won 38-0!! Great game :) Every game Trey has been to they have won... maybe they should hook us up with tickets to keep their good luck charm coming!

Football Fun

Football season has started back up! We have enjoyed tailgating and some pretty good football games (and one frustrating one). 

Trey was out of town for the first game on Labor Day weekend, vs Lousiana Tech. It was SO hot that day, a noon game in August!

I was wearing white shorts and spilled my pumpkin beer on myself... I'm a clutz. And grateful that we have a washer and dryer in the RV!

My cooler was so full of ice and freezing cold I couldn't bare shoving my hand down in there, so I tried using tongs... fail.

The Best Salad Ever

My friend Kristen brought this salad to dinner at a friend's one night and it was so good that we make her bring it all the time now. Trey and I decided to recreate it ourselves the other night to go along with our echilada pasta

What You Need:
romaine lettuce
avocado
tomato
red onion
salt
pepper
garlic powder
oregano
red wine vinegar
olive oil

What You Do:
Cut up the red onion, tomato and avocado. Mix well with romaine lettuce. Sprinkle salt, pepper, garlic powder and oregano on top. Drizzle with red wine vinegar and olive oil. 


S'mores in the oven!

I love a good dessert and am always trying to find new, fun ones. This is a quick, easy way to make smores inside! I found it on pinterest but there was no link, just directions and a picture. 



What You Need:
2 cans crescent rolls
mini marshmallows
milk chocolate, chocolate chips (or hershey kisses)
graham cracker crumbs

What You Do:
(This pin said to use a cupcake pan, I would actually try it just on a plain cookie sheet next time. I couldn't fill the crescent rolls up enough in the cupcake pan)
Unroll crescent rolls and fill with graham cracker crumbs, chocolate chips and mini marshmallows. Fill pretty full! Wrap the crescent roll over itself and tuck in on the backside. 

 Bake at 350 for about 15 minutes!
