Cajun Chicken Linguine

This recipe is actually good for you and tastes good!

What You Need:
8 oz linguine
1 pd chicken breast strips
1 tbsp olive oil
2 peppers (I used red and yellow) thinly sliced
2 cups sliced mushrooms
1 onion, sliced
about 3 tsp minced garlic
1 cup milk
salt and pepper
fresh parsley, chopped
cajun spice*

*If you want to make cajun spice you will need:
2.5 tbsp salt
1 tbsp oregano
1 tbsp paprika
1 tbsp chili powder
1 tbsp ground black pepper


What You Do:
Cook the pasta according to package. 
Cut the chicken in to thin strips and season with 1-2tsp cajun spice. Spray pan with cooking spray and cook chicken until cooked through (about 5 minutes). Set chicken aside. 

Heat 1 tbsp olive oil, place onion and peppers in the skillet, season with salt and pepper (and possibly more cajun spice if you like to heat things up). Cook for about 5 minutes. 

Add sliced mushrooms and garlic in skillet. Saute until the mushrooms are tender. Add the chicken back in the skillet along with about 1 cup of milk. Cook it until it boils. 

Add linguine and parsley, toss to mix well. Serve with grated Parmesan cheese.
