This recipe for zucchini bites came out of our flyer that comes in the weekly produce box. It turned out delicious!
What You Need:
1 cup zucchini, grated
1 egg
1/4 yellow onion, diced
1/4 cup cheese (cheddar or Parmesean)
1/4 cup italian bread crumbs
salt and pepper to taste
What You Do:
Preheat oven to 400 degrees.
Spray a muffin tin (or mini muffin tin) with cooking spray.
Grate the zucchini, then place in a dish towel to squeeze out the excess water (don't skip this part or the bites will be soggy)
Combine all ingredients in a bowl and mix well.
Using a spoon, fill the mixture about 1/2 full in each muffin tin and press down in to pan. Bake for 18-22 minutes, then broil to get the tops crispy.
**If using a mini muffin tin, fill to the top and bake for 15-18 minutes until the top is brown. I am curious to use a mini muffin tin, I think they would be better because there would be more in each "bite"
