One Pan Burrito Bowls

I found this recipe on pinterest in a link with a lot of one-pan meals. They really are so easy and way less to clean up! 

What You Need:
1 lb chicken breast - cut into bite sized pieces
3 Tbsp olive oil
1/4 cup diced yellow onion
1 cup uncooked rice
1 can (14.5 oz) diced tomatoes (drained)
1 can (15 oz) black beans (drained and rinsed)
1/2 tsp garlic powder
1/2 tsp chili powder
1 tsp cumin
2 1/2 cups chicken broth
2 cups monterey jack cheese
salt and pepper to taste

optional for toppings:
freshly diced tomatoes
diced green onions
sour cream
guacamole


What You Do:
Heat 2 Tbsp oil in the pan and saute onions until they start to soften. 
Season chicken with salt and pepper, add to the pan with onions and cook over medium high heat for a few minutes until chicken starts to brown. 
Move the chicken to one side of the pan, add the other Tbsp oil and saute the rice for about 2 minutes. 
Stir in black beans, tomatoes, chicken broth, garlic powder, chili power and cumin. 
Bring to a boil, cover and reduce heat to low. Simmer for about 20 minutes until rice is cooked. 
Sprinkle with cheese and let it melt for a couple of minutes off the heat. 


PS - in finding the recipe to link above I noticed that she has a version of this in the crock pot! Can't wait to try that!!
