Baked Zucchini with Mozarella

To go with our spinach artichoke pasta that I posted about yesterday, I made baked zucchini with mozarella, also originally from the Budget Savvy Diva website.

Her's was a grilled zucchini, but we don't have a grill pan so I just broke it down to the basics:

What You Need:
3 medium zucchinis (give or take depending on how many people you are feeding!)
1-2 tablespoons olive oil
garlic powder
mozarella cheese

What You Do:
Preheat oven to 375.
Cut the zucchini into 1/2 inch thick slices.
Put them in a mixing bowl and drizzle olive oil on top (just enough to coat them).
Shake zucchini around in the bowl so that all are coated in olive oil.
Sprinkle salt, pepper and a little bit of garlic powder on top to season.
Lay on a cooking sheet
Bake in the oven for about 10 minutes
Take out and add mozarella cheese on top.

Put back in the oven and put the oven on BROIL, putting them on the top rack to brown the cheese.
