Spinach Artichoke Baked Pasta

I found another delicious recipe through pinterest. It's from Budget Savvy Diva. I made it when we had friends over for dinner last week and everyone loved it! I LOVE spinach artichoke dip so I just had to try this pasta.

What You Need
14 oz of Orecchiette Pasta -- I couldn't find this and just used a 12 oz box of farfalle (bowtie) pasta, basically just a short noodle!
1 Tbsp Olive Oil
1 Cup of Chopped Onion
3 Cloves of Garlic (minced)
1 Cup of Sour Cream
4 oz of Cream Cheese (at room temperature)
3/4 Cup of Parmesan Cheese
1 teaspoon Lemon Juice
10 Oz of Spinach (thawed and excess water squeezed out)
13.5 oz Can of Artichoke Hearts (rinsed and chopped)
1 Cup of Mozzarella cheese
Salt
Pepper

What You Do
Preheat Oven To 425
Cook pasta according to directions on the box. When pasta is done and you go to drain it, save 1/4 cup of the water!
Heat oil in pan and saute onions (8 – 10 minutes on medium) Add garlic and cook for one more minute.
In a large bowl mix sour cream, cream cheese, parmesan cheese, lemon juice, onions, and garlic.
Add cooked pasta to the bowl and mix together.
Stir in spinach, artichokes, 1/4 cup of cooking liquid from the pasta, and 1/2 cup of mozzarella cheese. Sprinlke a little bit of salt and pepper on in too, stir all together!
Place mixture into greased 2.5 – 3 qt casserole dish and sprinkle the other 1/2 cup of mozarella cheese on top.
 


















Bake for about 10-15 minutes or until golden brown on top.
