Best Quesadillas Ever

We had some left over tortilla wraps and decided to use them to make quesadillas last week. On Tuesday nights when I have to be online for my grad school class for 3 hours Trey is in charge of dinner. He put chicken in the crock pot for the quesadillas so that it would shred nicely, it shreds so much better when cooked in the crock pot. He chopped up a green pepper and an onion, added salsa and queso to the crock pot and let it sit. I kid you not that was the best chicken mix in a quesadilla I have ever had.

Ingredients:
2 large chicken breasts
1 green pepper - chopped
1 small onion - chopped
salsa - about 1 cup
cheese dip/queso - about 1/2 cup
tortillas
mozzarella cheese (just bc that's what we had in the fridge.. but it was good!)

Directions:
Put all ingredients in the crock pot and cook on high for 4 hours (or low for 8 if you have the time). When it is done, shred chicken with a fork.  
Put chicken mixture onto tortilla, top with mozzarella cheese
Cook in pan with a little bit of oil or quesadilla maker
