Egg Brunch Casserole

The other delicious breakfast dish that I mentioned in last week's tailgate post was also of course a pinterest discovery. It is an easy crock pot recipe that is prepped the night before and ready to eat when you wake up!

What You Need:
1 pack of bacon (the recipe called for 6-8 strips, but I opened a whole one anyways and decided to use it all... it was great!)
1 onion peeled & chopped
1 clove garlic peeled & minced
1 green pepper, seeded & chopped
1 (2 lb) bag frozen hash browns
1 1/2 cups shredded cheddar cheese
12 eggs
1 cup milk
1/2 tsp salt
1/2 tsp pepper

What You Do:
Spray crock pot with non-stick cooking spray
Cut cooked bacon into 1/2 inch pieces, set aside.
Saute onion, bell pepper and garlic for 5 minutes.
Place 1/3 of the frozen hash browns on the bottom of crock pot, add 1/3 of bacon, 1/3 of onion, pepper, garlic mixture and 1/3 of cheese.


Repeat layers, ending with cheese on top.

In a large bowl, mix eggs, milk, salt & pepper. Pour ingredients over crock pot.
Cover and turn on low for 8-10 hours.

Serves 8-10
